As you will see, the next few Homecrest posts will all be about what to do when you make something and have leftovers of certain ingredients. I absolutely hate waste, and I would much rather create something new and interesting than throw away perfectly edible food! So this morning, when I made baked eggs inside avocado cups (it looked absolutely ridiculous so no photos for now!), I had a lot of leftover avocado flesh from scooping out the inside to make space for the egg. Pair that with having leftover gluten-free spaghetti, and you get avocado pesto! Yum.  Continue reading
